    WISHBONE COOKIES

    Source of Recipe

From Retro Baking by Maureen Fischer

    List of Ingredients

    1 package active dry yeast

    1/4 cup warm water

    2 1/2 cups all-purpose flour

    1 cup sugar, divided

    1 1/2 teaspoons salt

    1/2 cup butter

    1/4 cup shortening

    2 eggs, separated (reserve whites)

    1/4 cup cream

    1 teaspoon almond extract

1 1/4 cups pecans, finely chopped, divided

    2 teaspoons instant coffee

    1 tablespoon water

    Recipe

Dissolve yeast in warm water and set aside. In small mixing bowl, sift together flour, 1/4 cup sugar and salt. In medium mixing bowl, cream together butter and shortening. Mix in egg yolks, cream and almond extract; beat well. Add yeast mixture, flour mixture and 1/2 cup pecans; mix well. Chill at least 1 hour. In small mixing bowl, combine remaining 3/4 cup sugar, 3/4 cup pecans and coffee. Using teaspoon, form dough into balls and roll into 6-inch strips about 1/2 inch in diameter. In small bowl, lightly beat egg whites and water. Dip dough sticks into egg whites and coat with sugar mixture. Form a "V" with the dough and place on greased baking sheet. Press bottom of the "V" together so it looks like a wishbone. Bake at 400 degrees 12 to 14 minutes.

    Makes about 3 dozen.
