    3 tablespoons flour
    2 tablespoons olive or peanut oil
    4 tablespoons medium hot chili powder (for a spicier sauce, add ground cayenne peppers, starting at 1/4 teaspoon)
    1/4 cup orange juice
    2 cups water
    1/2 teaspoon cumin
    1/2 teaspoon oregano
    1/2 teaspoon salt
    2 garlic cloves, minced
    2 pounds pork roast, cubed

    Brown flour in cooking oil on medium heat. Add chili powder and blend. Add orange juice, water, cumin, oregano, salt and garlic. Bring to boil. Add pork and simmer 2 to 2-1/2 hours until meat is tender.

    Serve in warm flour tortillas. (Store-bought can be used, then warmed in the microwave or oven).

    Yield: 10-12 servings.
