    # About 1/2 head fresh cauliflower
    # 1 tablespoon vegetable oil
    # 1/2 teaspoon cumin seeds
    # 2 bay leaves
    # 1 cup onion, chopped (1 small)
    # 1 teaspoon fresh gingerroot, chopped
    # 1/2 teaspoon green chiles
    # 1 teaspoon curry powder
    # 1/2 teaspoon ground turmeric
    # 1/2 teaspoon ground coriander
    # 1/2 teaspoon red chile powder
    # 1/2 teaspoon ground fenugreek
    # Salt, to taste
    # 1/2 cup ripe tomatoes, chopped
    # 1/4 cup plain cashews
    # Hot cooked rice
    # Cilantro, chopped (for garnish)

    Recipe



    Break the cauliflower into florets.

    Heat the oil in a wok. Add the cumin seeds and bay leaves; stir. Add the onion, gingerroot and green chiles, and saute until golden brown. Add the curry powder, turmeric, coriander, red chili powder, fenugreek and salt, and stir.

    Add the cauliflower, stir well and cook until tender. Add the tomatoes and cashews; stir, then cover a few minutes. Serve with plain white rice and garnish with cilantro.
