    Don’s Caribbean-Calypso Barbeque Chicken

    List of Ingredients




    Seasoning:
    1 tablespoon each of the following and mix together.
    Sweet paprika
    Salt
    Sugar
    Jamaican allspice
    Red cayenne pepper
    Nutmeg
    Black Tell cherry pepper
    Garlic powder
    Sweet cinnamon
    Thyme leaves.

    Marinade:
    Zest of one orange, plus juice
    Zest of one lime, plus juice
    1 large garlic clove minced
    1 Jigger, orange flavor rum or similar
    (Mix above ingredients in bowl, set aside.)

    Ingredients:
    1 whole chicken separated (can used chicken breast only if prefer)

    Sauce
    1 to 2 stalks of green onions (scallions), minced
    4 to 5 sun dried tomatoes, minced
    1 shot orange or pineapple Fizzi? Brand flavored rum.
    1/3 cup ketchup
    5 to 8 ounces of vegetable or chicken stock.
    ½ tablespoon of dry seasoning listed above
    1 to 2 tablespoons butter.
    2-3 tablespoons of olive oil.

    Recipe



    1. Place chicken pieces in bowl or bag and add marinade. Let set for 30 minutes
    2. Remove chicken, and cover with about half of dry season mixture.
    3. Set in refrigerator for one to four hours.
    4. Heat a large skillet, and allow to heat up before adding olive oil.
    5. Place chicken in presentation side first. Allow to sear on both sides. About 30 seconds to 1 minute per side.
    6. Place skillet with chicken inside of 350 degree oven. Cook for 20 minutes.
    7. Remove pan from oven. Place chicken on a hot plate and let sit while sauce is made.
    8. In the same pan that chicken was cooked, turn fire to medium high. Add butter and a little olive if needed.
    9. Add onions, seasonings and tomatoes. Sautee until onions softens.
    10. Carefully add rum. Allow to almost completely dissipate.
    11. Add ketchup and stock. Stir until mixed well. Check seasoning add salt and black pepper if needed.
    12. Turn heat down to simmer. Add chicken, cover and let simmer for 10 minutes.
    13. Remove chicken and spoon sauce over chicken and serve with your favorite carb and vegetable.
