    List of Ingredients




    * 1/2 pound flank steak or sirloin

    MARINADE:
    * 1/2 tablespoon rice wine
    * 2 teaspoons soy sauce
    * 1 tablespoon cornstarch
    * 3 tablespoons water

    AROMATICS:
    * 2 teaspoons hot garlic chile paste
    * 1 tablespoon minced green onions
    * 1 tablespoon minced fresh ginger
    * 1 tablespoon minced fresh garlic
    * 1 tablespoon soy sauce

    SAUCE:
    * 1/2 teaspoon MSG
    * 2 teaspoons sugar
    * 1 teaspoon black vinegar
    * 1 teaspoon cornstarch
    * 1 1/2 tablespoons water

    STIR-FRY:
    * 6 water chestnuts
    * 5 dried wood ears (optional)
    * 1/2 cup oil, for frying

    Recipe



    Remove any fat from beef. Rinse and slice thinly against the grain, then
    shred into thin matchstick slices and place in bowl.

    For Marinade: Mix rice wine, soy sauce, cornstarch and water, pour over
    meat and marinate meat for at least 20 minutes.

    For Aromatics: Mix together hot chile paste, green onion, garlic and soy
    sauce in small bowl.

    For Sauce: Combine MSG, sugar, black vinegar, cornstarch and water in
    another small bowl.

    For Stir-Fry: Mince water chestnuts into matchstick slices. If using dried
    wood ears, soften them in warm water, remove, and trim off any hard ends, then
    pat dry. Heat wok or large skillet; add oil and heat to 300 degrees. Add beef
    and immediately stir with spatula to separate pieces. Cook for 20 seconds,
    remove from pan and drain well.

    Drain all but 3 tablespoons of oil from pan and heat oil until very hot.
    Add aromatics and stir-fry until fragrant. Add water chestnuts and wood ears and
    stir. Add meat to pan, then sauce ingredients; stir-fry over high heat until all
    ingredients are mixed and coated with sauce. Remove to serving platter and
    serve.

    Makes 2-3 servings.
