    # 3 eggs
    # 1 tablespoon skim milk
    # 1 tablespoon butter
    # 1/8 cup diced tomato
    # 1/8 cup diced onions
    # 1/4 cup crumbled feta cheese
    # 1/4 cup diced pre-cooked gyro meat (optional)
    # Salt and pepper to taste

    Scramble eggs with milk.

    Melt butter in non-stick pan on medium high heat. Pour egg mixture evenly into pan and cook, lifting sides of omelet to let uncooked egg flow underneath, until egg mixture is almost set (about 1 minute). Quickly sprinkle other ingredients over half of omelet. Fold plain side of omelet over ingredients and continue cooking until egg is cooked and cheese is slightly melted (about 30 seconds).

    Season with salt and pepper to taste.

    # Makes one omelet.
