    Mai Pham’s Thai Caesar Salad

    1 clove Garlic, sliced and pan-fried in oil until golden brown
    1 tsp. garlic, minced
    1Tbsp. fish sauce
    1 1/2 cups mayonnaise
    2 Tbsp. red wine vinegar
    1 each lemon, zest of
    1/2 each lemon, juice of
    1 tsp. sugar, granulated
    1 tsp. black pepper
    2 each lime leaves, (kaffir), finely chopped
    1 head roamaine, washed and cut bite size
    1/2 cup parmesan, grated or shaved
    2 cups croutons, homemade are best

    Place the pan-fried and minced garlic, fish sauce, mayonnaise, vinegar, lemon zest, lemon juice, sugar and black pepper into a food processor. Blend until smooth and creamy, about 1 minute. Stir in chopped lime leaves and refrigerate the dressing until use.

    To serve, toss the romaine with the dressing until well coated. Add the dressing incrementally, as a great Caesar salad should not be over dressed. Sprinkle with cheese and toasted croutons and serve right away…enjoy!
