    1/2 pound pork loin, cut into matchsticks
    1 tablespoon sherry
    1 tablespoon heavy soy
    1 tablespoon cornstarch
    3 eggs, beaten
    2 cloves garlic, minced
    1 tablespoon minced ginger
    2 tablespoon peanut oil, divided
    1/4 cup lily flowers, soaked in warm water and drained (opt.)
    6 black mushrooms, soaked in warm water and drained (opt.) 1/3 cup cloud ear mushrooms soaked and drained (opt.)
    3 cups shredded Napa cabbage
    3 green onions, slivered
    1 tablespoon Hoisin sauce

    Marinated the pork strips in a mixture of sherry, soy and cornstarch. Meanwhile heat 1 tablespoon of oil in the wok and scramble the egs quickly and remove while still soft, reserve. Add another tablespoon of oil and cook the garlic and ginger for 1 minute. Add the pork and cook for 2 minutes, then add the vegetables to the wok and cook for 2 minutes. Add the eggs and Hoisin sauce and stir to combine. Serve the Mu Shu with Peking pancakes or floor tortillas and Hoisin sauce.
