    List of Ingredients




    * 45ml (3tbsp) olive oil
    * 1 bunch spring onions, sliced
    * 4 tomatoes, skinned and chopped
    * 12 small new potatoes
    * 450ml (16fl oz) beef stock
    * 8 small young carrots, scrubbed or peeled thinly
    * 250g (9oz) green beans, trimmed and halved
    * 200g (7oz) shelled fresh peas (or frozen)
    * 100g (3 1/2oz) smoked ham, sliced into strips
    * 12 asparagus tips
    * 2 hard-boiled eggs, sliced

    Recipe



    1. Heat the olive oil in a large pan and fry the spring onions and tomatoes for 4-5 minutes, until softened.
    2. Stir in the potatoes and stock and simmer for 5 minutes, then add the carrots, beans and peas. Return to the boil, then simmer for a further 6-8 minutes, until the vegetables are tender.
    3. Stir the strips of ham into the vegetables and season to taste. Blanch the asparagus in boiling water for 3 minutes then drain.
    4. Serve the vegetables hot, topped with asparagus tips and slices of egg.
