    Peking Beef and Bell Pepper Stir-fry

    1. 12 ounces sirloin steak, sliced into strips
    2. 2 tablespoons soy sauce
    3. 2 tablespoons medium sherry
    4. 1 tablespoon cornstarch
    5. 1 teaspoon light brown sugar
    6. 1 tablespoon sunflower oil
    7. 1 tablespoon sesame oil
    8. 1 garlic clove, finely chopped
    9. 1 tablespoon grated fresh ginger
    10. 1 red bell pepper, seeded and sliced
    11. 1 yellow bell pepper, seeded and sliced
    12. 4 ounces sugar snap peas
    13. 4 scallions, cut into 2-inch lengths
    14. 2 tablespoons oyster sauce
    15. 4 tablespoons water
    16. cooked noodles, to serve

    Recipe



    1. In a bowl, mix together the steak strips, soy sauce, sherry, corn- starch, and brown sugar. Cover and marinate for 30 minutes.

    2. Heat the sunflower and sesame oils In a pre- heated wok or large frying pan. Add the garlic and ginger and stir- fry for about 30 seconds. Add the bell peppers, sugar snap peas and scallions and stir-fry for 3 minutes.

    3. Add the beef, together with the marinade juices, to the wok or frying pan and stir-fry for another 3-4 minutes. Pour in the oyster sauce and water and stir until the sauce has thickened slightly. Serve immediately with cooked noodles.
