    List of Ingredients




    Pico de gallo: 2 lbs. plum tomatoes, seeded and diced into 3/8-inch pieces
    3/4 cup diced red onion
    2 Tblsp chopped cilantro
    2 Tblsp seeded, chopped jalapenos
    1/4 Tblsp each: granulated garlic, salt Guacamole:
    6 avocados, pitted and diced
    1/2 cup chopped red onions
    3/4 cup chopped plum tomatoes
    1/4 Tblsp Tabasco
    1/2 tsp lemon juice
    1/4 Tblsp each: granulated garlic, cumin
    1/2 Tblsp salt
    Pinch cayenne pepper
    3/4 Tblsp finely chopped cilantro
    Nacho chicken:
    1 lb. boneless chicken breast meat
    Fajita marinade of choice
    1 cup diced yellow onions
    2 Tblsp vegetable oil
    1/3 cup barbecue sauce
    8 fried nacho chips
    1/2 cup mixed shredded cheeses
    Sour cream
    Cilantro leaves for garnish

    Recipe



    1. For pico de gallo, combine plum tomatoes, red onion, cilantro, jalapeno, granulated garlic and salt. Cover and refrigerate.

    2. For guacamole, mash avocadoes with onions, tomatoes, Tabasco, lemon juice, garlic, salt, cumin, cayenne and cilantro. Don't overmix.

    3. For nacho chicken, marinate chicken in marinade to taste overnight. Remove chicken from refrigerator. Grill until cooked. Cool, then dice into 1/4-inch cubes. Saute yellow onions in oil until translucent. Mix chicken with barbecue sauce and cooked onions. Refrigerate to cool.

    4. Heat oven to 375 F. Place nacho chips on foil-lined baking sheet. Microwave chicken mixture until warm. Place generous amount of chicken on each chip. Sprinkle with cheese. Bake 6-8 minutes. Serve with sour cream, pico de gallo and guacamole. Garnish with cilantro.
