    Chicken in Garlic Sauce

    List of Ingredients




    1 (2 1/2 lbs.) Chicken, cut into 8 pieces
    Spanish Olive Oil, enough for deep frying
    3-4 Bay Leaves
    2 oz. Spanish Olive Oil
    10 cloves Garlic, finely chopped
    pinch crushed Red Pepper
    1/2 tsp. Spanish Paprika
    Salt and Pepper to taste
    1 oz. Chablis or Dry Spanish Sherry
    Parsley sprigs or Spanish Pimientos and Peas for Garnish

    Recipe



    Heat oil for deep drying in pan until it is very hot, but not smoldering.
    Add bay leaves and chicken parts; deep-fry for 10 to 15 minutes until chicken is cooked through.
    Remove chicken from oil, set aside.
    In separate pan, heat 2 oz. of olive oil; add garlic, crushed pepper and Spanish paprika.
    Sauté together for about 30 seconds. Add chicken, stirring to coat evenly, for about 30 seconds.
    Sprinkle with salt and pepper to taste.
    Add chablis or sherry, cook for about 1 minute.
    Remove chicken to plate along with sauce; garnish with parsley sprigs or Spanish Pimientos and peas.
