    1 big chicken (serves 4)
    garlic
    lemons, limes or, even better, sour oranges
    butter
    soy sauce

    Allow the chicken to marinate in the lime or sour orange juice to which you have previously added a pinch of salt. The finely chopped garlic should be lightly browned in butter. The whole chicken (or cut in pieces) should be added to the pan with the garlic and butter and turned as it browns until it is browned on all sides; this entire process is at medium heat. When it is browned, add the soy sauce and cover tightly. Leave it cooking for 10 to 20 minutes so the flavors mix. Serve with rice and fresh sautéed vegetables.

    Serves 4.
