    Honduran Shredded chicken with salsa

    List of Ingredients




    3 pounds chicken breasts

    1 tomato

    1 bell pepper

    1 onion

    1 bunch cilantro, chopped

    ½ teaspoon black pepper

    ½ teaspoon cumin

    1 teaspoon sazon completa

    2 cubes chicken bouillon

    1 teaspoon garlic powder

    2 (8-ounce) cans tomato sauce

    ¼ stick butter

    1 teaspoon salt

    Recipe



    Add enough water to submerge chicken to a large pot and bring to a boil. Add chicken and half of all vegetables, roughly chopped, and half of all seasoning. Lower the heat and simmer the chicken until cooked, about 30 minutes.

    Take the chicken out of the liquid and set aside to cool. When cool, shred the flesh by hand or with a fork. Pour the cooking liquid through a sieve, retaining liquid. Set aside.

    Melt butter in a clean pan. Add remaining tomato, bell pepper and onion, finely diced, to pan and cook until the onion is translucent. Add chicken, reserved liquid, tomato sauce, salt and remaining seasoning. Cook gently for 20 to 25 minutes.

    Serve with rice or pressed between crusty white bread dressed with mustard, mayonnaise and shredded cabbage.

    Serves 10.
