    List of Ingredients




    -- 1.5 lb. Pork Loin chopped to stew sized pieces
    -- 3 chile passilla (seeds & membranes removed)
    -- 1/4 onion & 1/4 onion (for boiling with pork
    -- 2 garlic cloves (1 for boiling with pork)
    -- 1 medium red tomato boiled
    -- 2-3 tablespoon vinegar
    -- Oregano (A pinch)
    -- Black pepper (A pinch)
    -- Salt to taste

    Recipe



    In a saucepan cover pork with water(about 12 cups) add 1/4 onion & 1 garlic clove & salt and heat for about 1 hour or until meat is tender.

    For the Sauce:
    Toast chile in a hot frying pan(no oil) a little on each side until browned(do not burn). Boil tomatoes. In a blender put chiles, tomatoes, 1/4 onion, 1 garlic clove and 1 cup of pork broth. Blend.

    In fry pan with 1-2 tablespoon of oil add ingredients from blender and fry 10 minutes on medium to low heat. Add one more cup of broth. Add a pinch of oregano, black pepper, vinegar and salt to taste. Add pork and let heat through for 15 minutes with a medium to low flame. Add more broth if desired to make salsa to your consistency. Not too thick not too runny.

    Serve with rice, beans and tortllas for a wonderful Mexican dinner.
