    Recipe Introduction


    This dish is a refreshing brunch dish. The fish salmon is "cooked' with the vodka, salt and sugar instead of the typical "smoked" salmon.

    Salmon Preparation

    1. One side fresh Atlantic Salmon (skin on)
    2. Place salmon on sheet pan skin side down
    3. Pour 2 ounces Stoli Limon Vodka on top of salmon
    4. Sprinkle zest from 3 oranges, 3 limes and 3 lemons on top of salmon
    5. Sprinkle 2 ounces kosher salt and 4 ounces granulated sugar on top of salmon
    6. Marinate for 24 hours
    7. Slice salmon into very thin pieces

    Lentil Salad Preparation

    1. Boil one cup of lentils for 15 minutes or until soft. Boil 2 large carrots then finely chop.
    2. Chop 2 raw celery sticks. Mix together with 1 ounce of white vinegar, 1 ounce of extra virgin olive oil and salt and pepper to taste. Dill Sour Cream Preparation
    3. Chop 4 sprigs of dill and mix with 1-cup sour cream

    Plate Presentation
    Place Lentil Salad on small round plate. "Mound" Citrus cured Salmon on top of the lentils and top with a dollop of Dill Sour Cream.
