    3 tbsp. Crisco oil
    4 tbsp. flour
    2 large onions, chopped
    6 celery stalks, chopped
    1 large green pepper, chopped
    2 #2 cans tomatoes, undrained
    2 lb. okra, sliced
    4-6 crabs, cleaned (optional)
    4 qt. water
    1/2 tsp. garlic salt
    2-3 crumbled bay leaves
    1 tbsp. salt
    black or red pepper to taste
    Tabasco sauce to taste
    1 1/2 tbsp. Worcestershire sauce
    1 1/2 lb. raw peeled shrimp
    1 lb. crabmeat and/or crab claws

    Make a dark golden roux in heavy skillet of oil and flour. Stir in onions, celery, and green pepper and simmer a few minutes, stirring constantly. Add undrained tomatoes and okra. Simmer until okra is tender. Place in large soup pot the crab bodies and four quarts of water. Add seasonings and cook very slowly over low heat for several hours, stirring frequently. Add crabmeat, crab claws, and shrimp during last 15 minutes of cooking time. Adjust seasoning. Serve in soup bowls over hot rice. Serves 10-12
