    Broiled Rainbow Trout

    Source of Recipe

    Robert Bryan, Treece's Restauran, tRossville

    List of Ingredients

1 (8 oz.) rainbow trout filet

    2 tablespoons of butter

    1/2 teaspoon of garlic powder

    1/4 teaspoon of Cajun seasoning

    1 lemon

    Parsley flakes for garnish

    Recipe

Combine butter, garlic powder, Cajun seasoning and the juice of one lemon in a bowl and mix thoroughly.

Oil grate of the grill or the skin side of the trout filet.

Broil the fish with the skin side down on medium-high heat.

As the fish cooks, spread half of the butter mixture over the fish filet.

When the fish becomes opaque, flip fish over onto the meat side for approximately 2 minutes. Then turn fish back over to the skin side and finish spreading the remaining butter onto the fish.

Garnish with parsley flakes and a lemon wedge.

Melted butter can be used for dipping if preferred.

Cooking time is approximately 5 to 7 minutes.

    Kitchen tips

Broiled fish can be as complicated or as simple as you want to make it. It also is a healthy way to enjoy fish versus baking or frying. Here are a few tips for enjoying a truly succulent broiled fish.

Be sure grill grates are clean and well oiled. Or, you may oil the skin of the fish if you prefer. This is done to prevent sticking.

If the fish should begin to stick, you may slide aluminum foil under the fish.

Fish may be cooked entirely on the skin, but grill marks make for a good presentation when you serve the dish.

If possible, choose fresh fish as opposed to frozen to ensure the best quality and taste.

Many flavored butters and sauces pair well with fish, besides the one used in this recipe for Broiled Rainbow Trout. Tarragon butter or béarnaise sauce both are excellent choices with broiled fish.

Finally, just be creative and have fun in the process!
