    Cousin's Pesto Shrimp

    Recipe Introduction


    This recipe combines two favorites and has become a standard with many of our customs. It can be served as an appetizer or combined with pasta for a flavorful entrée.

    List of Ingredients





    12 large shrimp – peeled &n deveined
    1 large tomato
    1 red onion
    1 bell pepper
    2 tablespoons pesto sauce
    ½ cup extra virgin olive oil
    ¼ teaspoon salt
    4 wooden skewers

    Recipe



    1. Mix olive oil, pesto sauce and salt together and set aside.
    2. Cut onion, pepper and tomato into quarters.
    3. Place cut vegetables on wooden skewers by alternately placing shrimp between tomatoes, onions and peppers.
    4. Place skewers in pesto marinade, coating them generously. Allow shrimp to marinate for about 15 minutes but do not marinate too long as this will cause them to become tough when grilled or broiled.
    5. Place shrimp on grill and cook over medium heat or cook under broiler, turning them when one side is done. They should take about 7 minutes. Do not overcook shrimp to prevent toughness.
    6. Serve shrimp just as they are or over bed of rice. Shrimp can be served with remaining marinade heated and drizzled over top.


    Serves 4.
