    GINGER-CITRUS GLAZED SALMON

    List of Ingredients




    Four 8-oz. salmon filets

    Ginger-Citrus Sauce:
    1 cup water
    3 oz. rice vinegar
    3 oz. soy sauce
    12 oz. brown sugar .
    ¾ tsp. chili garlic sauce
    2 tsp. orange juice concentrate
    1½ tsp. minced fresh ginger
    ¼ cup corn starch
    ½ cup water

    Recipe



    Ginger-Citrus sauce (Yield: approx. 4 cups):
    1. Combine the first 7 ingredients in a saucepot and bring to a boil over a medium fire.
    2. Make a slurry by mixing the ¼ cup of corn starch with the remaining ½ cup of water. Add the slurry to the liquid s soon as it has come to a boil.
    3. Continue to cook the mixture for another minute while it thickens. Remove from the fire and allow to cool.

    Salmon:
    1. Heat pan and coat lightly with butter or oil spray.
    2. Season the presentation side of salmon with ¼ tsp. of seasoned salt (optional, not included in analysis).
    3. Grill salmon, presentation side down for 3 minutes
    4. Turn salmon, and place 1 oz of water around the fish, cover and steam for 3 minutes.
    5. Remove cover, and place one more ounce of water around the salmon. Immediately cover and continue steaming for 3 more minutes.
    6. Ladle or brush 1 ounce of hot Ginger-Citrus sauce evenly over the presentation side of salmon.
    7. Sprinkle with black and white sesame seeds and chopped parsley.
    8. Suggested serving: with rice and steamed veggies.

    Serves 4.
