    Grilled Key West Shrimp Tostadas

    1 tbs olive oil
    3/4 lb. shrimp, peeled & deveined
    1/3 med. red pepper, julienned
    1/3 med. yellow pepper, julienned
    2 small jalapeno peppers, sliced
    1/3 small vidalia onion (or other sweet onion, sliced vertically
    1 clove garlic, minced
    1 tsp. McCormick brand Key West Style Spice Blend
    2 tbs. feta cheese, divided
    freshly grated parmesan
    cooking spray
    2 flour tortilla shells
    grill wok

    Recipe



    Light grill. Or start the charcoal.
    Saute peppers and onion in olive oil about 2 min. on med. heat, add minced garlic, seasoning & shrimp. Reduce temp to med. low, simmer 3 min. til shrimp are pink and veggies are crisp-tender. Remove from heat, transfer to bowl.
    Spray grill wok with cooking spray, place on grill rack. Spray both sides of one tortilla with cooking spray, place in wok, toast on one side about 1 min. Flip over and sprinkle with parmesan, top with 1/2 veggie-shrimp mixture and 1 tbs. feta cheese. Grill to heat thru. Transfer to plate, Repeat with remaining tortilla. Cut into fourths, and serve.
