    Jamaican Me Crazy Crab Chowder

    List of Ingredients




    1 lb. Phillips Crab Meat, claw recommended
    2 medium jalapeno peppers, seeded and chopped
    7 cups chicken broth
    2 cups frozen corn, thawed
    1/4 cup cilantro, chopped
    2 medium zucchini, thinly sliced
    2 medium tomatoes, chopped
    1 Tbsp. cumin
    1 tsp. coriander
    1/2 Tbsp. chili powder
    1 tsp. (each) salt and pepper
    1 tsp. cayenne pepper
    1 cup milk
    15.5 oz. can black beans, drained and rinsed
    6 slices bacon, cut into 1/2" pieces
    1/4 cup dark rum
    2 medium onions, peeled and chopped
    9 cloves garlic, peeled and chopped
    1 medium sweet potato, peeled and chunked
    2 medium bell peppers, seeded and chopped

    Recipe



    1. In a large stock pot, cook bacon until crisp. Remove with slotted spoon onto paper towels and reserve.

    2. Cook onion and garlic in remaining bacon fat for 4 minutes, stirring frequently.

    3. Add sweet potato chunks, jalapeno pieces, and bell peppers and cook for 5 minutes.

    4. Stir in chicken broth and cilantro. Bring to a boil, then quickly reduce heat to a simmer. Simmer for 10 minutes.

    5. Stir in corn, zucchini, tomatoes, cumin, coriander, chile powder, salt, and pepper. Cook for 5 additional minutes.

    6. Stir in milk, cayenne, and black beans. Bring to a boil, then reduce to a simmer. Continue to simmer for 5 minutes.

    7. Stir in crab meat and rum. Cook for 2 final minutes.

    8. Top with reserved chopped bacon when serving.

    Serves 6.







    Be careful not to overcook the vegetables-- they should remain crisp and sweet.
