    Serves 4.

    List of Ingredients




    For Calamari:

    1 pound calamari, cleaned

    2 Roma tomatoes, diced

    1 lime, juice of

    2 quarts water with 1/2 cup kosher salt

    1 ice bath

    Freshly cracked black pepper

    Kosher salt

    For Olive Dressing:

    1/2 cup kalamata olives

    1/2 cup pitted green olives (Shoreline Deli has good olives)

    2 tablespoons capers

    1/4 cup red wine vinegar

    1/2 cup extra virgin olive oil

    1/2 teaspoon red pepper flakes

    1 teaspoon Dijon mustard

    Wine: 1 bottle Russiz Superiore Pinot Grigio

    While you're having a sip of pinot grigio to get yourself started off on the right track, put your pot of salted water on high heat and get your ice bath ready. Then toss the dressing ingredients into a food processor and pulse till minced. Set aside.

    Cut squid into rings and halve the tentacles. When the water boils, drop the whole batch into the pot and let it go for just 1 minute. With a slotted spoon or strainer yank out the pieces and dunk into the ice water bath to stop the cooking. When cool, rinse, pat dry and chuck into a mixing bowl. Pour the lime juice on top and tumble in the tomatoes and olive dressing. Toss; season to taste with freshly ground black pepper and kosher salt. Pour wine for the troops and fall to.
