    Grilled Barbecued Salmon & Greens
    with Grilled Tomato & Portabella Mushroom

    List of Ingredients




    2 6 to 8 oz. Salmon filets/with skin on one side
    2 TB Dry BBQ spice
    4 TB Chili oil
    3 oz REDSTONE secret BBQ Sauce (heated)
    (your choice-semi sweet sauce suggested)
    2 Large portabella mushroom caps
    1 Vine ripened tomato about 3 or 4 inches across
    cored and cut in half
    2 C Mixed greens
    1 TB Chopped parsley for garnish
    2 Basil leaves, chopped into julienne strips
    1 Lemon/cut into wedges
    4 TB Vinaigrette
    salt and pepper

    . Rub dry spices on flesh side of salmon
    then drizzle with chili oil and place
    on hot grill - skin side against grill / grill for 3 to 5 minutes

    2. Turn over to flesh side on grill and lift off skin
    grill another 3 to 5 minutes

    3. Brush mushroom caps and tomato halves
    with chili oil and place on grill cut side down with fish
    until grill marks show- about 3 minutes

    4. Prepare two plates- with one cup of greens on each plate

    5. Remove grilled tomatoes and mushroom caps
    and salt and pepper to taste. Place along side
    the greens...and top tomato with the basil strips

    6. Lace all with drizzle of the vinaigrette

    7. Turn fish once more and baste newly turned hot
    grilled side with hot BBQ sauce before lifting from grill

    8. Place salmon BBQ side up along side greens
    and grilled tomatoes mushroom

    9. Serve with a few wedges of fresh lemon along side salmon
