    Rhode Island Quahog Beer Fritters

    2 cups flour
    1 teaspoon baking powder
    2 eggs, beaten
    dash of Tabasco
    1 cup beer
    1 pint fresh quahogs, minced, with juice
    ( quahogs, a type of clams )
    bacon fat or cooking oil

    Recipe



    Sift together flour and baking powder. Stir in the eggs, Tabasco, and beer to
    make a smooth batter.
    Stir in the minced clams. Drop by tablespoons onto a hot greased griddle.
    Cook for about 6 minutes on each side, or until -golden. Makes 6 servings.
