    List of Ingredients




    3 Tbs. shallots
    1 Tbs. crushed garlic
    1/8 tsp. ground oregano
    2 Tbs. olive oil
    4 mussels
    6 cockels
    4 clams
    6 oz. white fish (such as snapper)
    ¼ cup white wine
    2 cups low-sodium tomato sauce
    2 large prawns
    4 oz. squid
    6 oz. cooked spagettini (3 oz. dry)
    2 Tbs. chopped fresh parsley
    4 Tbs. grated parmesan cheese

    Recipe



    1. In advance: Scrape and beard the mussels. Soak the other shellfish overnight if possible.
    2. Coat the fish and shellfish in the garlic, shallots and oil.
    3. In a large warm sauté pan, add all the fish and shellfish, including all of the garlic, shallots and oil. Toss and stir for about two minutes, then add the white wine.
    4. Simmer, allowing the wine to reduce by half.
    5. Stir briefly, then add the tomato sauce and bring back to a summer for five minutes. The shellfish should be just opening.
    6. Add the prawns, stir, and open any stubborn shellfish, then add the squid (stirring briefly – about 15 seconds).
    7. Add the cooked spagettini, and stir to mix thoroughly.
    8. With tongs, lift the pasta out of the pan and transfer into your serving bowl.
    9. Pour the remaining sauce over the fish.
    10. Garnish with chopped parsley and drizzle with fresh garlic puree and top with Parmesan cheese.


    Serves 2.
