    Schumacher's Fish Salad Stuffed Tulips

    Serves 4

    2 cups cold cooked fish

    2 hard cooked eggs

    1 tsp. fresh dill weed (chopped)

    1/2 cup mayonnaise

    1 tsp. lemon juice

    2 tsp. sugar

    Pinch of salt and white pepper

    1/2 cups celery

    4 tulips

    Recipe



    Dice cooked fish into large pieces. Be sure to remove bones. Cook eggs. Peel and dice into 1/4 inch pieces. In a bowl, place dill, mayonnaise, lemon juice, sugar, salt and pepper. Mix well. Peel celery with a potato peeler and dice into 1/4 inch pieces. Add eggs, celery and fish to mayonnaise base. Combine gently.



    Pick tulips and remove pistils and stems. Place tulips in cold, salted water (1 qt. water and 2 Tablespoon. salt). Let sit for 5 minutes. Remove tulips and gently shake dry. On a plate of lettuce, place a tulip and fill with fish salad. Serve with a sweet pickle and soft roll.
