    List of Ingredients




    # 1 1/2 cups of fish stock
    # 2 lbs. peeled shrimp
    # ½ cup canned crushed mackerel
    # ½ cup diced onions
    # ¼ cup green pepper
    # 4 cloves garlic
    # 1 tablespoon of olive oil
    # 2 cups crushed tomato
    # ½ teaspoon sugar
    # 1 teaspoon salt
    # ½ teaspoon pepper
    # 1 teaspoon cayenne pepper (or to taste)
    # 1 teaspoon paprika
    # ½ teaspoon fennel
    # cilantro garnish

    Begin grits (recipe below) then get started:

    Cover the bottom of skillet in olive oil and sauté onions and green pepper for about 5 minutes. Add fish stock, canned crushed mackerel, and chopped garlic, tomato, sugar, paprika, fennel, salt and pepper, cook for about 15 minutes. Add shrimp, cook for 5 minutes, and do not over cook.

    Creamy Grits
    # 4 cups water
    # 1 teaspoon salt
    # ½ teaspoon white pepper
    # ½ stick butter
    # 1 cup stone ground or quick grits
    (cook slowly for 20-30 minutes)
    # 1 cup heavy cream

    Boil water, add salt and butter. Slowly add grits while stirring. Be sure to stir or grits will be lumpy. Cook for 2-3 minutes on medium heat and reduce heat to low. Cover and let cook until creamy. Cream is optional, but guaranteed to deliver creamer grits. Add white pepper and serve.
