    List of Ingredients




    1 pound of dolphin fillet, cut into four pieces
    1 pink grapefruit
    2 ounces sugar
    1 clove garlic, finely chopped
    4 ounces unsalted butter
    4 ounces clarified butter
    2 oranges
    1 large shallot, finely chopped
    2 ounces red wine vinegar

    Lightly sautŽ the fish in clarified butter. Remove from pan, add shallots and garlic, and cook without browning. Add vinegar and reduce. Add juice of grapefruit and orange. Add sugar. Thicken with butter. Pour sauce over fish. Garnish with grapefruit and orange segments. Prince Edward Island Mussels 2 pounds mussels, washed and cleaned 2 cloves chopped garlic juice of half a lemon 1-2 ounces white wine 1/3 cup cream 1 small bunch chopped parsley Place first five ingredients in deep saucepan with lid, heat on high and boil until mussels open. Place in bowl, sprinkle with parsley and serve with fresh bread. Cocktail sauce 4 ounces mayonnaise 2 ounces ketchup 1/2 teaspoon lemon juice touch of Worcestershire sauce hot sauce prepared horseradish freshly ground pepper Whisk ingredients together, taste and adjust and whisk some more. For example, if too sweet, add more lemon juice and hot sauce.
