    "A Christmas Carol Cookbook" by Key, Brazil and Wells

    List of Ingredients




    1/3 cup vanilla yogurt
    3 tablespoons sugar
    1/4 cup dark rum
    1/4 cup sherry
    1 cup milk
    2 large pasteurized egg whites
    1/2 cup heavy whipping cream
    Freshly grated nutmeg

    Recipe



    In medium bowl, combine yogurt and sugar. Whisk until sugar dissolves. Add rum, sherry and milk and combine thoroughly. In another bowl, beat egg whites onto yogurt mixture but do not mix. In clean bowl, whip cream until soft peaks form. Gently whisk egg whites and cream into yogurt mixture.

    Ladle into cups and top with nutmeg. Makes six (6-ounce) servings.

    Tester's note: The consistency is very thick when you make the eggnog, but if you cover it and let it sit in the refrigerator for a few hours, the consistency becomes a little thinner and easier to drink, but all the flavor remains.
