    List of Ingredients




    12 slices of Speck
    A bunch of watercress
    A bunch of white dandelion or rocket
    A few leaves of treviso
    4 clementines
    Good balsamic vinegar
    Good olive oil
    Parmesan cheese

    Recipe



    This is such a lovely Christmassy thing to eat. It's full of fabulous flavours and colours, and would work as a starter in a country where Christmas is cold and snowy, or in a country where Christmas is a go down the beach affair!

    Method:
    - Trim and wash the watercress if it needs it and with a pair of scissors, trim the dandelion or rocket and add it to the same bowl with the treviso.
    - Carefully peel Clementines, keeping them whole, and sllice them into thin slices.
    - Add the sliced clementines to the salad leaves and dress with olive oil, a splash of balsamic vinegar, salt and pepper.
    - Divide the salad between four plates and tuck 3 pieces of Speck in amongst the salad leaves. Shave a few pieces of Parmesan cheese over the top and drizzle with a little more balsamic vinegar and some extra virgin olive oil.
