    List of Ingredients




    For the French toast:

    3 beaten eggs

    3/4 c. whole milk

    1/4 t. ground cinnamon

    1/8 t. ground nutmeg

    1/2 t. pure vanilla extract

    8 slices of brioche bread

    Melted butter for greasing pan

    For the caramelized bananas:

    4 bananas, sliced diagonally

    4 T. unsalted butter

    4 T. light brown sugar

    For the spiced whipped cream:

    1/2 c. heavy whipping cream

    1 T. powdered sugar

    1/4 t. pure vanilla exract

    1/8 t. ground cinnamon

    Pinch of ground nutmeg

    Pinch of ground ginger

    Pinch of ground cloves

    To make the French toast, whisk together the eggs, milk, cinnamon, nutmeg and vanilla in a medium-sized mixing bowl. Grease a large pan with melted butter and place over meidum-high heat. Dip slices of brioche, one at a time, into egg mixture, covering both sides of slice. Quickly place into pan and cook both sides, turning once, until golden brown.

    To make caramelized bananas, heat a pan over medium heat and melt the butter. Stir in the light brown sugar and cook until sugar is melted. Stir until sugar becomes thick and bubbly. Add bananas and toss to coat. Set aside.

    To make the spiced whipped cream, whisk the cream, sugar, vanilla and spices in a bowl or mixer, until soft peaks form.

    To serve: Lay two slices of the French toast, overlapping with each other, on a plate. Top with caramelized bananas and then a dollop of the whipped cream. If you like, you may garnish with a sprinkle of cinnamon and a few cranberries and mint leaves, in the fashion of holly berries and leaves. Makes 4 servings.
