    1 cup sweetened flaked coconut

    1 cup all-purpose flour

    1/2 teaspoon salt

    1/2 teaspoon ground black pepper

    1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch strips

    2 eggs, beaten

    1/3 cup melted butter

    1 (12-ounce) jar apricot preserves

    Preheat the oven to 400 degrees. Combine coconut, flour, salt and pepper in a heavy-duty resealable plastic bag. Dip chicken strips into beaten egg, letting excess drip off. Place chicken in plastic bag; shake until chicken is coated with the coconut mixture. Place coated chicken strips in a shallow nonstick baking pan. Drizzle melted butter over chicken; bake for 25 minutes or until chicken is cooked through, turning once. Serve with apricot preserves as a dipping sauce.
