This recipe is adapted from "Christmas from the Heart of the Home" by Susan Branch (Little Brown and Co., 1990).
List of Ingredients
12 boneless skinless chicken thighs
2 cups dry, seasoned bread crumbs
1/2 cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1 cup (2 sticks) butter, melted
Recipe
Cut chicken into 1-inch cubes. Mix together bread crumbs, Parmesan cheese, salt, onion powder and cayenne. Dip chicken into melted butter; roll in bread crumb mixture and place on ungreased cookie sheets in single layer. Refrigerate until ready to cook.
Preheat oven to 375 degrees.
Bake in preheated oven 15 to 20 minutes, turning once. Makes about 80 pieces.
