    Recipe Introduction

Scotia Plaza, 40 King St. W., Toronto Ontario
Note, last I saw it wasn't there anymore so I don't know if this is a copycat.

    List of Ingredients

    2 x Ripe plum tomatoes
    3 x Leaves fresh basil
    1 tsp Chopped fresh parsley
    3 tbl Extra-virgin olive oil
    Salt and pepper to taste
    2 x Crusty italian rolls
1 cl Garlic, cut in half

    Recipe

Finely chop the tomatoes and basil. Mix them in a bowl with parsley and olive oil. Season with salt and pepper, to taste. Cut the rolls in half. Toast them under a hot broiler for a few minutes, until nicely golden. Remove from oven, and rub the toasted side generously with the cut side of the garlic clove. Top each piece with a portion of the tomato mixture and serve immediately.

    Serves 2.
