# Capellini, uncooked 8 oz
# Canola/olive oil blend 6 Tbl
# Garlic, chopped 4 tsp
# Basil, ,julienne 1/8" x 2" 4 Tbl
# Sea salt / black pepper mix 1 tsp
# Roma tomatoes, diced 3/8" 6 Tbl
# Extra virgin olive oil 2 Tbl
# Roma tomatoes, diced 3/8" 4 Tbl
# Basil top 2 ea
# Romano cheese, shaved 2 heaping tsp
# Option: Shrimp or Chicken 6 oz.
EQUIPMENT NEEDED:
# sauté pan
# Pasta cooker
# Tongs
# Measuring spoons
# PREPARATION INSTRUCTIONS
Step 1. (Optional) In a hot 9" sauté pan, sauté raw shrimp, medium rare or add cooked chicken portion to 1 Tbl of blended olive oil.
Step 2. Place uncooked capellini in boiling water and cook for 2-3 minutes
Step 3. In a sauté pan, heat oil with garlic, salt, pepper and basil or add to cooked protein.
Step 4. Add julienne basil and hot, well-drained pasta
Step 5. Add 6 Tbl roma tomatoes and 1Tbl of oil, combine well.
Step 7. Place mixture in center of pasta bowl.
Step 8. Garnish with 4 Tbl roma tomatoes, basil top and shaved cheese.
