List of Ingredients
•2 lb. of butternut squash
•1 large onion
•Extra virgin olive oil to taste
•Pumpkin seeds
•Thyme to taste

Clean and dice the squash. Cut onions julienne style (thinly). Saute the onions in olive oil until the onion color is translucent. Then place the squash into a pan and saute onions and squash together. Add water to the pan until it reaches a level just above the squash. Cook for 25 minutes. Puree with a food mill or pass through a sieve. Place shrimp in frying pan with olive oil and thyme. Only saute briefly until the outside is light brown. Place the sauteed shrimp into the squash puree. Garnish with olive oil and pumpkin seeds. Serve hot.
