    2 pounds cleaned calamari (squid)
    1 cup all-purpose flour
    1 teaspoon salt
    Freshly ground pepper
    Olive oil or vegetable oil for deep-frying
    Lemon wedges

    Rinse the calamari thoroughly inside and out. Drain well. Cut the bodies cross wise into 1/2-inch rings. Cut the tentacles in half through the base. Pat dry.
    Spread the flour on a sheet of wax paper and season with the salt and pepper to taste.
    Pour 2 inches of oil into a deep heavy saucepan or a deep fryer. Heat the oil to 375F on a deep-frying thermometer, or until a small piece of the calamari sizzles and rises to the surface when added to the oil. When the temperature is reached, lightly roll a few pieces of calamari in the flour mixture. Shake off the excess flour. Slip the pieces into the hot oil, without crowding the pan, and cook until the calamari are a light golden brown, about 3 minutes. With a slotted spoon, transfer the calamari to paper towels to drain. Repeat with the remaining calamari. Serve hot with lemon wedges.

    Serves 6-8.
