    Roast Leg of Lamb

    List of Ingredients




    1 leg of lamb
    1 cup of vegetable oil
    2 oz. of olive oil
    sprigs of rosemary
    sprigs of fresh mint
    1 cup red wine
    4 cloves of garlic halved
    2 spanish onion quartered
    1 medium carrot cut into four pieces
    1 T whole peppercorns
    salt to taste

    Recipe



    Preheat oven to 450 degrees Fahrenheit. In a baking dish place vegetable oil and place in oven – heat to boil.
    Sear lamb on all sides to golden colour.
    Remove from oven and dispose of excess oil.
    Deglaze pan with 1 cup of red wine.
    Return lamb to pan, add olive oil, garlic, onion, carrot, peppercorns and salt to taste.
    Reset oven to 400 degrees Fahrenheit.
    Cover lamb with foil and place in oven for approximately 20 minutes.
    Remove foil and bake for an additional 10 minutes.
    Lamb will be pink to light golden brown.
    For well-done, bake another 10 minutes while continuing to brush with juices.
    Remove from oven and allow to rest before slicing.
    Pour remaining juices into skillet; reduce over medium heat to preferred taste and density.
    Pour over leg of lamb and garnish with sprigs of fresh rosemary and fresh mint.
