    List of Ingredients




    8 tablespoons olive oil
    4 tablespoons chopped garlic
    12 ounces (21-25 count) gulf shrimp, peeled, deveined
    8 tablespoons sun-dried tomatoes, sliced, reconstituted in water for 30 minutes, drained
    2 cups Madeira wine
    4 tablespoons butter
    4 cups fresh baby spinach
    12 ounces linguine, cooked
    Salt and freshly cracked pepper to taste

    In large saute pan heat oil until hot. Add garlic, shrimp and tomatoes and cook until shrimp are almost completely cooked.

    Deglaze pan with wine and cook until shrimp are cooked through. Add butter, spinach and pasta and toss until heated through. Add a touch of salt and top with cracked pepper
