    This recipe is a little different from my usual stuffed artichokes, but just as
    tasty. Enjoy!

    List of Ingredients




    4 large artichokes
    3 lemons, quartered
    1 teaspoon Dom DeLuise Italian Blend
    1/4 cup olive oil
    1 teaspoon sherry vinegar
    1/2 teaspoon Dijon mustard
    2 small shallots, finely chopped
    1/2 cup Kalamata olives, (or any oil cured olives) pitted and finely chopped
    1/4 cup Parmesan cheese
    additional Parmesan for dusting

    Recipe



    Trim stems and cut off sharp tips from artichokes leaves. Bring a large pot of
    water to a boil. Add the juice of two lemons to the water and toss the squeezed
    lemon quarters into the water. Add the artichokes and boil gently for 25 to 30
    minutes, or until artichokes are tender and a leaf pulls off easily.

    In a small bowl, whisk together the juice of one lemon, Italian Blend, olive
    oil, sherry vinegar and mustard. Add the shallots, olives and Parmesan cheese.

    Drain artichokes well and place on a platter, drizzle with dressing and sprinkle
    with additional Parmesan cheese.

    Serves 4
