    List of Ingredients




    1 skinless, boneless double chicken breast
    extra virgin olive oil
    salt
    pepper
    carrots
    yellow and green zucchini
    mushrooms

    Recipe



    1. Place chicken breast on a hard surface, cover with Saran wrap. Pound until flat. Pound consistently so the meat does not tear.

    2. Grill the chicken breast on a flat grill or a skillet using a seasoning of your choice -- olive oil infused with chili pepper is Giuseppe's favorite!

    3. Slice vegetables julienne style -- Giuseppe uses a mandalin.

    4. Sautee vegetables with olive oil, salt and pepper.

    5. Serve chicken over vegetables.

    Giuseppe's tips for watching carbs while eating Italian:
    # Dip chicken in marinara sauce

    # Cook vegetables in Marsala wine

    # Grate fresh parmesan cheese over chicken and/or vegetables
