    Grandma’s Pasta Piselli con Pancetta

    List of Ingredients




    ¼ Pound of Pancetta (Italian Bacon)
    1 Medium yellow onion - chopped
    ½ Cup of extra virgin olive oil
    2 Cans of small sweet peas or 1 pound of fresh peas
    2 Cups of water
    1 Pound of Pasta Padarelle (very wide pasta - 1 inch) - Borgatti’s will cut it to order
    (I am truing to convince him to sell it online)
    Salt, pepper, fresh basil, grated parmeggiano cheese

    Recipe



    1. Heat the oil in a saucepan and add the onion, cook until onion is translucent.
    2. Add pancetta - stir over a low flame for 3 to 4 minutes.
    3. Add peas and water and cook over medium heat for 20 minutes stirring occasionally.
    4. Boil pasta in salted water until aldente. (fresh pasta takes four minutes)
    5. Drain pasta and place into a serving bowl, add the sauce made from steps 1-3.
    6. Garnish with basil and cheese.
    7. Add pepper to taste.


    Serves 4.
