    Sicily is known for citrus. Oranges and lemons find their way into many dishes

    List of Ingredients




    2 pounds green beans (preferably French)
    2 5-ounce tuna steaks
    Salt and pepper
    2 ripe tomatoes
    1 red onion
    2 oranges
    2 hard-cooked eggs
    1 lemon
    Extra virgin olive oil
    Balsamic vinegar

    Recipe



    Bring a large pot of water to the boil. Add green beans and cook until they are bright green but still very firm. Drain, then rinse with cold water to stop their cooking. Drain on towels.

    Season tuna steaks with salt and pepper, and grill or broil until done to desired taste (preferably rare). Set aside to cool.

    Core tomatoes, and slice them in ¼-inch pieces. Peel and slice onion. Combine onion, beans and tomatoes in mixing bowl. Peel oranges, and slice them into segments. Coarsely chop hard-cooked eggs. Cut tuna steaks into large bite-sized pieces. Add orange, eggs and tuna to other ingredients in the bowl. Season with salt and pepper. Squeeze lemon juice over the top, then drizzle with olive oil (start with about ½ cup) and a little vinegar (perhaps 2 tablespoons). Toss gently to cover all ingredients with vinegar and oil. Place in a decorative bowl or platter, and garnish with orange wheels, if desired.

    Serves 6
