    I think this is a great dish because it's really light and it's packed with flavor. It's also cool to do for someone's who is trying to watch what they eat, because this dish a light compared to "normal" pasta dishes.

    List of Ingredients




    3 quarts (12 cups) chicken or vegetable broth
    8 ounces long whole wheat pasta, such as spaghetti or linguini
    1 cup vegetables (such as fava beans, yellow peppers, asparagus) washed, peeled, and cut into small strips
    3 teaspoons high-quality Extra Virgin Olive Oil
    Salt and Pepper
    1/4 cup grated Parmigiano Reggiano

    Recipe



    Wash, peel (if necessary), and cut the vegetables into small strips. (If using the fava beans, remove the beans from their outer pod. Then broil the beans and, with a paring knife, remove the bitter-tasting, pale green sheath covering the bean.)

    Bring the broth to a boil and add the pasta. When the pasta is almost done - about five minutes in - add the vegetables. Cook for about two more minutes, or until the pasta is al dente (tender, but not mushy).

    Drain the pasta and vegetables, reserving the broth. Return 1 cup of the broth to the pot and bring to a boil over high heat. Add the olive oil and boil for 30 seconds.

    Spoon some broth from the pot and place a shallow amount into the bowls. Place the pasta and vegetables on top of the layer of broth. Season to taste with salt and pepper. Sprinkle with a combination of freshly grated cheese and curls of cheese (formed with a vegetable peeler).

    Serves 2
