16 oz Anthony's Penne Rigate
10 oz large shrimp, shelled and cleaned
1 1/2 cups crushed tomatoes
1 1/2 cups yellow bell pepper, diced
1 1/2 tablespoon fresh basil, chopped
1/2 cup mushrooms, sliced
1/4 cup olive oil
1/4 cup parmesan cheese, freshly grated
3 cloves garlic, thinly sliced
salt and pepper to tasteRecipe
Cook and drain pasta according to package directions. Heat olive oil in a large skillet. Saute shrimp until half-cooked, then add peppers, mushrooms, garlic and seasonings and lightly cook for 3 minutes. Add crushed tomatoes to skillet and simmer until heated throroughly. Mix in hot pasta, sprinkle with parmesan cheese and serve.
