    If you are a lover of red wine, serve a Chianti. De Vos says he likes a premium chardonnay poured with this meal.

    List of Ingredients




    # 3 tablespoons vegetable or olive oil
    # 2 boneless chicken breasts, skinned and cut into 1-inch pieces
    # Flour, for dredging
    # 1 large white mushroom, sliced
    # 1/2 cup hot Italian sausage, sliced
    # 1 teaspoon garlic, minced
    # 1/4 cup white wine
    # 1/4 cup Gorgonzola cheese, crumbled
    # 2 1/2 teaspoons Romano cheese, grated
    # 1/2 cup heavy cream
    # 1 cup marinara sauce
    # 1 cup dried penne pasta, cooked according to package directions
    # Salt, to taste
    # Pepper, to taste
    # Fresh basil or parsley (for garnish)

    Recipe



    Heat the oil in a sauté pan over medium heat. Dredge the chicken pieces in flour and place in the pan. Cook until golden brown.

    When the chicken is almost done, add the mushroom slices, sausage and garlic, and stir. Add the white wine, Gorgonzola and Romano cheeses, heavy cream and marinara sauce, and let the mixture simmer for a minute.

    Stir in the cooked penne. Season with salt and pepper. Garnish with fresh basil or parsley.

    Makes 2 servings.
