    List of Ingredients




    12 medium-sized prawns, peeled and de-veined
    4 oz. mixed lettuce
    6 oz. roasted peppers
    4 Tbsp. lemon vinaigrette (see separate recipe below)
    1 zucchini
    12 Tbsp. goat cheese

    Lemon Vinaigrette:
    ¼ cup lemon juice
    ¾ cup olive oil
    pinch salt
    pinch pepper

    Recipe



    1. Cook the prawns in boiling water with salt for 2 minutes.
    2. Slice zucchinis top to bottom.
    3. Place a teaspoon of goat cheese on the zucchini slice and roll up.
    4. Make the skewer by beginning with the prawn first, followed by the zucchini “roll.”
    5. Season with salt and pepper.
    6. Cook in the grill for 3 minutes.
    7. Serve on a bed of roasted peppers and mixed greens tossed with the lemon vinaigrette dressing.

    Serves 4.
