    4 boneless, skinless chicken breast halves
    1 1/2 teaspoons salt, divided
    1 teaspoon freshly ground black pepper, divided
    1/4 cup all-purpose flour
    4 tablespoons (1/4 cup) vegetable oil
    1 small onion, finely diced
    2 large cloves garlic, minced
    1/4 teaspoon dried oregano
    2 teaspoons granulated sugar
    2 tablespoons balsamic vinegar
    1 large ripe tomato, chopped
    2 tablespoons capers, rinsed
    2 Sicilian green olives, pitted and chopped
    2 tablespoons raisins
    1/2 cup dry white wine
    1 cup low-sodium chicken broth
    Chopped fresh parsley, for garnish

    Recipe



    Place the chicken breasts between 2 sheets of plastic wrap and pound to a thickness of 1/4 inch. Sprinkle the chicken with 1 teaspoon salt and 1/2 teaspoon pepper. Dredge in the flour.

    Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for about 10 minutes to brown both sides. Remove the chicken and set aside.

    Add the onions and garlic to the pan. Saute for about 2 minutes, then add the oregano, remaining salt and pepper, the sugar and vinegar. Stir in the tomato, capers and olives.

    Soak the raisins in the wine and add both to the sauce; stir in the chicken broth and cook until thickened, for about 5 minutes.

    Return the chicken to the pan and heat through. Arrange the chicken and sauce on a serving platter and sprinkle with chopped parsley.

    Makes 4 servings.
