    List of Ingredients




    1 T. olive oil
    1 Lb. sweet or hot Italian sausage (prefer bulk, but can be link, removed from the casings)
    1 Med. yellow onion, chopped
    1-2 Med. green and or red bell pepper(s), chopped
    3-4 Cloves of garlic, pressed or minced
    1 Can (28 oz.) Ready-cut Italian tomatoes with juice
    1 Can (8 oz.) sliced mushrooms with liquid
    1 Can (16 oz.) chicken broth
    2 Cans (8 oz.) Italian-style tomato sauce
    3/4 C. small (salad-type) elbow macaroni
    2 Tsp. Italian seasoning
    Salt and fresh ground pepper, to taste
    Grated fresh Parmesan cheese for each serving

    n a large heavy soup pot, heat the oil over a medium-high heat, then add and break up the sausage, onion, bell pepper(s) and garlic. Lightly brown the ingredients, then drain-off the excess oil. Stir in the tomatoes, mushrooms, broth and tomato sauce. Let this mixture simmer 15-20 minutes, then stir in the macaroni and seasonings. Continue to simmer an additional 10-15 minutes or until macaroni is al dente. Ladle into individual serving bowls and sprinkle each with a tablespoon of Parmesan cheese and serve Serves 4.

    Break out the warm garlic bread for this one.
